Spinach Artichoke Dip

This is a perfect RV dish because it requires just one mixing bowl, minimal chopping, and can easily be cooked outside on a portable bbq. Great for Potlucks too.

ingredients
6 ounces Mozzarella cheese, shredded
6 oz plus 2 oz Parmesan cheese, grated
1/2 cup Sour cream
1/2 cup Mayonnaise
3 tsp Jarred minced garlic
1 Lemon, juiced
1 cup Cream Cheese
12 - 16 oz can Artichoke hearts, well-drained
12 ounces Frozen spinach, thawed
1/2 tsp Salt
1 tsp Pepper
instructions
1. In a medium bowl combine the cheeses, mayonnaise, garlic, lemon juice, and cream cheese. Mix well.
2. Chop the well-drained artichoke hearts and thawed spinach. Add both to cheese mixture. Add the salt and pepper.
3. Combine the mixture well. Give it a taste for flavor and adjust if desired.
4. Pour into a bbq-proof dish. Top with the additional 2 ounces of grated parmesan cheese.
5. Wrap with aluminum foil and place on the bbq. Cook until it starts to bubble.

👨🍳Roll thawed spinach in a towel to squeeze out the excess water.
👨🍳Spray the inside of the aluminum foil with cooking oil before wrapping the dish to prevent the melted cheese from sticking to it.
